It's almost over....

Summer is almost over.  I'm happy and sad all at the same time!  I really dislike this humidity that we have been experiencing the last few days, thankfully we spent yesterday at the beach adn the water was wonderful, today we tried to go outside a few times, but came back in shortly to wipe the sweat off. 

We rode the bus to school with Elliot last week.  Tons of fun.  He is so excited to go to Young Fives.  I'm excited for him, but the closer it get's the smaller he seems to me, going out into the world on his own.  We will both be fine though.  We always are! 

Another thing I've been doing is canning.  Yup, taught myself to can last weekend.  I did plenty of research, especially after I saw that you could get botulism if you don't can salsa correctly.  That is some scary stuff, definitely don't want to spread that to anyone!  I can't find the recipe that i used, but that's ok, I don't plan to use it again, I wasn't a huge fan.  It's not bad, just a little to "tomatoey" and not spicy enough. 

Then this week I had to use up some jalapenos so I made some Hot Pepper Jelly, which is great poured over cream cheese with Wheat Thins to dip in it!  It's also good on a hamburger as I figured out tonight.  Yum!  Super easy too, that took me about an hour (gotta love the food processor)!

And tonight, I wanted to make raspberry jam and decided I wanted Rhubarb Raspberry Jam.  I struggled to find a recipe that I could can as opposed to freeze, although I'm not sure why... eventually I found and settled on this one.  I'm still smiling every time I hear a jar pop.  If you've ever canned you so know what I mean!  I did try a little right out of the pan, after burning the tastebuds off my tongue I decided it was a bit sweeter than I like, but the kids will like it.  Now I'm on the search for a tarter recipe.  And maybe I'll settle on freezing it this time too!  In fact, I may try this one!

Healthier?

We've been trying to be a little healthier over here. By "We", I mean "I", the rest of the family is just along for the ride! By healthier I mean exercising, eating better and trying my hardest to loose some of this weight that just doesn't fall off like it used to.

Eating healthier has meant that I joined Weight Watchers online. It's only been a few weeks, but most of all I've learned to eat lower calorie, lower fat, high fiber foods. Filling foods. Food that make me feel satisfied for longer. One of my newest favorite recipes is this:
Mexican Quinoa (If you've never tried Quinoa you definately should, yummy)
2t Olive Oil
1/2c. quinoa rinsed thoroughly (you can get this at health food stores and I also found it at Meijers on the top shelf by the rice)
1/2c. chopped onion
1 clove garlic, minced (I used the jar kind)
1/2c diced red pepper
1 14 1/2oz can rotel undrained
1 can whole kernel corn undrained
1/4t ground cumin
1/4t ground red pepper
1/4t salt
1 can black beans, rinsed
avacado
cheese

In a 2 quart nonstick saucepan heat oil over medium heat. Add qunioa, onion, garlic and red pepper and cook, stirring, until quinoa begins to crackle and onion is soft.

Add tomatoes, corn and seasonings, bring to a boil. Reduce heat, cover and simmer for 20 minutes or until quinoa is translucent and tender. Add black beans.

Uncover and continue cooking 5 minutes or until most of the liquid is absorbed.

Makes 4 servings, add 1/8 of an avacado chopped up and 1/8c cheese for a 5 point meal!

Excercising has meant that I get up much earlier than I ever though possible and head to the gym almost every morning. But now that I'm sleeping through the night it isn't so bad.

Speaking of Lila... she is on the move. FAST. She is trying so hard to pull herself up on everything and reach everything (and then proceed to eat it). Definately takes more supervision, but I would say that it makes her a bit happier than she used to be. She still likes us to be close, but were used to that! At her nine month appt last week she weighed in at 23 pounds 9 ounces, she is finally slowing down a bit! She has an eye doctor appt next week for her clogged tear duct, I'm not sure how bad it really is, but we'll see what they say!

Elliot had a big day a few weeks back (which I mentioned in a previous post). He started three-school. Just one day a week, the only opening that Zeeland Christian had mid-semester. He did so good when I dropped him off, he said goodbye and went and played, he loves it. He knows no one in his class so I wasn't sure how he would do, but it seems to be going well. I also signed him up for preschool next year, three days a week with his "best friend" as he says! The poor boy gets so bored at home with me so it will be nice for him to get to go to school!

Landon is busy with basketball on Saturday mornings and Bailey also has soccer on Saturdays, luckily only one game has overlapped! They seem to be having fun, both seemed to have improved over the last year quite a bit, Bailey scored her first goal ever this past week, we were all very excited for her adn luckily Matt was able to be there to see it!

I've taken very very few pictures so far this year and even fewer of them have made it off my camera onto my computer (0 to be exact). Hopefully I will find some time to do that soon and will be able to share some cuteness!

Appetizers

I'm an appetizer girl. I could be completely happy if I could only eat appetizers for the rest of my life (as long as chocolate was involved somewhere).

Some of my favorites are:
Buffalo Chicken Dip
1 block of cream cheese spread into bottom of 9x13 pan
Top with 1/2-3/4 cups ranch dressing and 3/4-1cup buffalo sauce
Top with 1 can of chopped up chicken pieces
Top this with shredded cheese
Bake at 350degrees for 30ish minutes

Sausage dip (originally shared with me by Sarah)
Brown one pound of sausage (I like hot, but italian or original are good too)
Mix with 1 block of cream cheese and 1 can of Ro-tel tomatoes
Serve with tortilla chips

I then use that to also make Jalapeno Poppers
Jalapeno peppers cut, and seeded (use gloves)
Fill with Sausage dip (See above)
Cover with shredded cheese
(Can also be wrapped in bacon, but this add's quite a bit of time and work so I normally skip it)
Bake at 350 degrees for a litle while (until hot)
ENJOY!

Bacon

Imagine my shear joy when I saw a show on the food network dedicated to my favorite food of late... BACON! (Yup, I'm yelling that one).

Seriously, I was in heaven.

OK, so it was staring a very cheesy Brian Boitano. But it's bacon. So that part didn't matter.

And, there were corn muffins. With bacon.
Sounds heavenly!

So, this evening I made them. I baked an entire pound of bacon for these muffins. OK, so it only called for 8 slices. I made 16. Don't judge.

In the end, I WASTED an entire (half) pound of bacon on these muffins. Ewwwwww. And now were out of bacon in the freezer. And I'm sure my husband will NOT be quick to restock. He can't stand that I LOVE bacon. Doesn't think it's good for us. What could be bad about bacon? Mmmmmmmmm!
